Banana Peach Bread
1/3 cup butter, softened
1/2 cup brown sugar
2 eggs
3 tablespoons sour cream
1 teaspoon vanilla
2 bananas, mashed
1 16-ounce can sliced peaches, drained and diced
1 1/2 cups whole wheat flour
1 cup oats
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
Preheat oven to 350 degrees F. Cream butter and sugars together, and beat in eggs. Stir
in sour cream and vanilla. Mash bananas with a fork and add diced peaches. Stir
bananas and peaches into butter mixture. In separate bowl, combine flour, baking
powder, soda and cinnamon. Gradually add to wet ingredients, stirring gently. Spoon
into lightly greased bread pan. Sprinkle top of batter mixture with brown sugar and
cinnamon and bake for 1 hour. Makes 1 loaf.
Todd's son Daniel loved this bread when he was a kid and would eat it everyday! It
makes a nice breakfast on the weekends, too!
